Barbecue Chicken Quesadilla with Blue Cheese and Barbecue Crisps

     Barbecue Chicken is to  Blue Cheese as soft is to crunchy!!!  Bring it all together and you have one heck of a celebration in your pie hole !!!  YIPPEE  ;)

1 Yellow Onion, diced
1 Tablespoon EVOO
1 Tablespoon chopped jarred Garlic
Dash Cayenne
1 pound boneless skinless Chicken Tenders
Barbecue Sauce ( we like Baby Ray's)
Low Carb Tortilla's ( I like La Tortilla Factory Low Carb White Flour or Mama Lupe Low Carb)
Blue Cheese Dressing ( we LOVE LOVE LOVE Brianna's brand of Dressing)
Quest Barbecue Potato Chips, crumbled

      Heat EVOO in skillet and add Onion, Garlic and Cayenne til golden brown, may take 30 minutes.  Then add Chicken Tenders til cooked thru, break up into small bites when cooked thoroughly.  Add enough Barbecue sauce to desired taste.  In separate skillet, spray with Pam and heat your low carb Tortilla on each side til golden and crispy.  Fill half of Tortilla with Barbecue Chicken mixture, fold in half, drizzle with Blue Cheese Dressing and top with Barbecue Potato Chip crumbles.  Enjoy  ;)
