Lemon Cheesecake Protein Cups





     These Lemon Cheesecakes are outta this world delish !!!  And each one is only 159 calories, 5.8g net carbs and 22g protein. You simply must try this out today !!!  ;)

Ingredients~
2 Lemon Quest Bars
2 Tablespoons 30 cal/cup Almond Milk
1/3 cup Egg Whites
5.3oz light Lemon Greek Yogurt 80-100 calorie
2 Tablespoons Coconut Flour
1 scoop Vanilla Isothority Protein Powder, found at Supplement Giant Wichita
10 drops Lemon Juice
Dash Cinnamon
Dash Vanilla
Soywhip for garnish, optional
Blackberries for garnish, optional

     Unwrap 1 of the Lemon Quest Bars and microwave for 10 seconds, then divide softened bar into 4 equal parts and pat into bottom of 4 silpat cupcake lined tin. Tear other Quest Bar into several pieces and combine with Almond Milk in microwave safe bowl and cook for 25 seconds or til melted through, stir til smooth, repeat process if necessary. Add the rest of the ingredients to batter and divide between the 4 silpat cupcake liners, pouring over Lemon Crust's.  Bake at 350 for 15-20 minutes.  Cool in fridge a couple hours or over night and top with Soywhip and a Blackberry for garnish. These are seriously fabulous !!!  Enjoy!!!  ;)
