Carmelized Onion, Bacon and Gouda Quiche







     Have you ever tried Gouda!? It's "Goud"!!!  I tried a sample at the Market and I was hooked, a Quiche was immediately in order!  And not any Quiche, a rich gooey melty smoked pie plate filled with Bacon, Onion, Cream and Asparagus.  For an 1/8th of this hearty Quiche it is only 269 calories, 9.8g net carbs, and 16.5g protein!  Give Gouda a go and get this goodness in the oven  ;)

Ingredients for 8 Servings~
6 slices Turkey Bacon, cooked and crumbled, set aside (I microwave mine for one minute at a time)
2 Tablespoons EVOO
2 large Yellow Onions, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne
2 cup fresh sliced Asparagus
2 Tablespoons Brown Spicy Mustard
4 Jumbo Eggs
1/3 cup Egg Whites
1 2/3 cup Fat Free Half&Half Cream
2 cups shredded Gouda (reserve a small amount for garnish)
1 Roma Tomato, diced and drain on paper towel

     Cook and crumble Bacon, set aside.  Heat EVOO in skillet, add Onion, Garlic and Cayenne til golden brown.  Add Asparagus til crisp tender, then stir in cooked Bacon and pour into greased pie plate.  Meanwhile stir together Mustard, Eggs, Egg Whites, Cream, and Gouda~pour over Onion mixture and bake at 350 for 55 minutes or til center is set.  Remove, garnish with remaining Gouda and diced Roma Tomatoes.  Enjoy  ;)
