Calabaza Rellena








     When you are as lucky as me as to gain a beautiful daughter in law from Argentina, then you are likely to come up with a few new fun recipes via her mother!  Such is the case with Calabaza Rellena, all new flavor combinations to excite the senses.  Prepare to experience Butternut Squash like never before, mine may have turned out a little different from the traditional dish, but hey ....  Hopefully this is the beginning of many more unique recipes on the horizon.  ;)

Ingredients for one Dish~
1 Butternut Squash, cut in half lengthwise and de-seeded
Olive Oil
1 medium Zucchini, grated and squeezed of excess liquid
Small can of Corn, drained
Can of Black Beans or Dark Red Kidney Beans, drained
4oz reduced fat Cream Cheese, softened
1/2 cup Tomato or Spaghetti Sauce
Salt, to taste
Pepper, to taste

Shredded Cheddar, desired amount
Sliced Green Onion, desired amount

     After slicing and removing seeds from Squash, rub with Olive Oil and season as desired (I used Salt, Pepper, Onion Powder, and Garlic Powder.  I also, had "the guy" in the produce department cut the Squash for me before I brought it home, which saved all my digits from any mishap ;).  Roast on aluminum covered pan at 400 for one hour, or fork tender.  Remove from oven, cool to touch, remove meat of Squash to a bowl and stir in remainder of first set of ingredients til well combined and add back to Squash shells.  Top with desired amount of grated Cheese and Green Onion, return to oven for another 10-15 minutes til heated thru and Cheese melted.  Enjoy  :)
