Orange Sugar Cookies







     "Orangecha" glad I had an extra Sunkist sittin' round!  You are going to fall in love with this citrus cookie, it's the perfect light treat when those cravings sneak up on you.  Each of these cookies are only 50 calories, 1.5g net carbs and 5g protein.  I'm wondering how many you have to eat before it's considered a fruit serving...!?  (I'm going with 4 since that's how many I wolfed down before I could stop...seem's bout right)

Ingredients for 22 Cookies~
1 large Orange, grate the Rind and squeeze the Juice
1/2 cup Sugar Cookie G Butter (gbutter.com)
1/2 cup Swerve Confectioners or Granular Erythritol
1 jumbo Egg
1/3 cup Nutiva Coconut Flour
1 scoop Andrea's Protein Cakery Whey Protein for Baking (shop.proteincakery.com)
1 teaspoon Baking Powder
1 teaspoon Orange or Lemon Extract
1 teaspoon Almond Extract

1 teaspoon Orange Rind
1/4 cup Sugar Cookie G Butter (gbutter.com)
2oz reduced fat Cream Cheese, softened

     Grate the Rind of entire Orange, should yield 2 teaspoons, set aside.  Then cut in half and squeeze Juice from pulp, should yield 1/4 cup.  Mix 1 teaspoon of Rind and Orange Juice with remaining first set of ingredients til well blended, drop by Tablespoon on Silpat lined cookie sheet, should yield 22 cookies.  Bake at 350 for 12 minutes, remove and cool.  Meanwhile, stir together second set of ingredients til smooth and top each cooled cookie with 1 teaspoon frosting.  Enjoy  :)
