Chinese Lettuce Wraps
(Serve left overs with freshly steamed green beans, or over rice if you eat carbs)
Do you love Lettuce Wraps but fear hidden fat and calories!? Whelp, fear no mo'! I have created the perfect combo using very lean meat and the right amount of rich sauce to create spectacular results. Each of the 8 servings are only 254 calories, 15g net carbs and 30g protein. Don't let Lettuce Wraps intimidate you any longer, not to be feared but revered! :)
Ingredients for 8 servings~
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Sesame Oil
1 medium sweet yellow Onion, diced
1 Tablespoon chopped Garlic
Dash Cayenne Pepper, to taste
1 pound sliced fresh Mushrooms
3 large stalks Celery, sliced
4oz shredded Carrots
2 pounds 93-99% ground Turkey (I used 99%)
2 8oz cans drained sliced Water Chestnuts, chopped
1/2 diced Red Bell Pepper, separate in half
1/2 cup Hoisin Sauce
1/4 cup Lite Soy Sauce
2 Tablespoons Sriracha
1 sliced Green Onion
Spiced Peanuts or Regular Peanuts, for garnish as desired (not included in macros)
Boston Bibb/Butter Lettuce
Heat Oil in large skillet, add Onions, Garlic and Cayenne til golden brown. Add Mushrooms til cooked thru and softened. Then add Celery and Carrots til crisp tender, add Turkey til cooked thru and drain excess fat. Stir in chopped Water Chestnuts and half Bell Peppers, Hoisin Sauce, Soy Sauce and Sriracha til well combined. Clean Lettuce Leaves and fill with mixture, garnish with Green Onions and remaining Bell Peppers. Add Spiced Peanuts if desired, not included in macros. This makes enough for a party! Enjoy :)
