Healthy Chicken Salad






     Wanna sink your teeth into a big bowl of Chicken Salad guilt free!?  Well you better read this entire recipe to see what my genius mind has created!  Let's just allow the macros to speak for themselves, this makes 10 cups with each cup being only 158 calories, 14g net carbs and 14g protein.  How's that for proof in the pudding!!!  :)

Ingredients for 10 cups, 10 one cup servings~
1 Tablespoon EVOO
1 Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne
Dash Salt
1.25 pounds Chicken Tenders
12 oz Grapes, sliced in half
3 stalks Celery, diced
6 mini tri colored assorted Bell Peppers or large Red Bell Pepper, diced
8oz sliced fresh Strawberries
4oz diced Fuji Apples
4oz fresh Blueberries
8oz diced or shredded Carrots
1/4 cup chopped Walnuts
3 Green Onions, diced
1/2 cup Walden Farms Amazin Mayo
7oz 2% Fage Yogurt
Garlic Powder to taste
Green mixed Salad

     Heat EVOO in skillet, add Onion, Garlic, Cayenne, and Salt til golden brown, add Chicken and cook thoroughly, break into bite size pieces with spatula.  Add to large mixing bowl along with all other ingredients but Mayo, Yogurt and Garlic.  In separate bowl, mix Mayo, Yogurt and dash of Garlic Powder to taste, pour on top of Chicken mixture and toss all together til fully coated. Serve one cup on bed of Greens, Macros do not include Green Salad.  Enjoy  :)

Edamame Rice with Spiced Beef






     I'm crazy for Edamame!  Mix it with a little rice, top it with spicy Beef and you have a hearty dinner on your hands!  This makes 4 servings, each serving is only 385 calories, 27g net carbs and FOURTY grams protein!!!  Hello Mame, you make the perfect weeknight meal, so get into my belly  :)

Ingredients for 4 servings~
1 Tablespoon EVOO
1 Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne
1 pound 99% lean ground Beef
2 Tablespoons Frontier Taco Spices (I buy mine in bulk online at Vitacost.com)
12oz cup cooked and shelled Edamame
2 cups cooked and prepared Brown Rice
3 mini tri colored Bell Peppers or 1 Red Bell Pepper
1 diced Green Onion

     Heat EVOO in skillet, add diced Onions, Garlic, and Cayenne til golden brown.  Add Beef til cooked through, drain and sprinkle with 2 Tablespoons Taco Spice.  Meanwhile mix Edamame and Rice and pour into large serving bowl, top with spicy Beef mixture, diced Bell Pepper and then diced Green Onion.  Serve and Enjoy  :)

Broccoli Sunflower Salad







     With all the Summer Salads surfacing right now, nothing is better than a tried and true golden oldie... especially if you can do a make over and watch it rise to the top of the health charts!  This Broccoli Salad makes a big batch for big crowds, with 12 full cups each cup serving is only 126 calories, 11.8g net carbs and 3.5g protein.  Check out my recipe and find out how I make this creamy dressing calorie friendly, and watch this medley dance with fun flavors!  ;)

Ingredients for 12 cups~
1 pound Broccoli Florets
6 slices Turkey Bacon, cooked and crumbled
1/3 cup shelled Sunflower Seeds
3 Green Onions, diced
3oz Baby Carrots, sliced or shredded
1 Red Bell Pepper, diced
4oz Fuji Apple, diced
8oz Grapes, cut in half
6oz Blueberries
4 stalks Celery, diced
1/2 cup Mandarin Oranges
1/3 cup Walden Farms Amazing Mayo
1/3 cup BRIANNAS Poppy Seed
Salt and Pepper to taste

     Mix all ingredients except Walden Farms Amazing Mayo, BRIANNAS Poppy Seed, Salt and Pepper in large bowl.  Then stir Mayo and Dressing til thoroughly incorporated and mix well into salad, season with Salt and Pepper.  Enjoy  :)

Double Chocolate Coconut Chip Protein Bar







     So what's a girl to do when she looks in her Quest Bar drawer and realize it's EMPTY!? ... First of all everyone remain calm... second of all, channel all Quest vibes into brain energy to create the next best thing...#girlpower   This fun recipe makes 7 super duper Quest Bar in a pinch protein pleasers!  Each Bar weighs approximately 3.5oz and is only 195 calories, 5g net carbs and 17g protein.  Can you say industrious!?  ;)

Ingredients for 7 Bars~
1/4 cup Chocolate Brownie Sweet Spreads, melted
1 cup 25 cal/cup Silk Cashew Milk
4 scoops Quest Chocolate Milkshake Protein Powder
1/2 cup Swerve Granular Erythritol
1/4 cup Cacao or Cocoa Powder
1/4 cup Nutiva Coconut Flour
Dash Cinnamon
Dash Vanilla
1oz Cacao Raw Nibs or Lily's Stevia Sweetened Dark Chocolate Chips
3 Tablespoons Reduced Fat Shredded Coconut

     Mix all ingredients together except Coconut Shreds, and form into 7 equal 3.5oz balls, spray your hands with Pam and shape into Bars, then lightly spray the tops of all Bars with Pam and sprinkle with Shredded Coconut, patting down gently.  Chill for at least an hour but best if chilled over night, Enjoy  :)

Mocha Chip Ice Cream






     If you love Bitter Sweet Coffee first thing in the morning then you will love Mocha Chip Ice Cream for breakfast!  And, why not!?  This would be the perfect healthy way to start the day with only 87.5 calories, 7g net carbs and 8.3g protein for each 3/4 cup... and if you are lucky you will need a re-fill!!!  ;)

Ingredients for 4 servings~3/4 cup each:
1 Tablespoon rounded DeCaf Instant Coffee Crystals or Postum
2 Tablespoons warm Water 
1 cup Fat Free Half n Half
1 cup 25 cal/cup Silk Cashew Milk
1 scoop Quest Vanilla Milkshake Protein Powder
Dash Cinnamon
Dash Vanilla
1 Tablespoon (60) Lily's Stevia Sweetened Dark Chocolate Chips
Whipped Topping garnish, as desired

     Stir DeCaf crystals and warm Water together til dissolved and well blended.  Add Half n Half, Cashew Milk, Protein Powder, Cinnamon and Vanilla to Magic Bullet or Blender til well incorporated and pour into freezer bowl of 2Qt Cuisinart Frozen Yogurt-Sorbert & Ice Cream maker churning for 20-25 minutes watching for desired consistency, add chips during last few minutes.   Top each serving with Whipped Topping if desired.  If you don't have a Cuisinart, pour mixture into a casserole dish and put in freezer, stirring every 45 minutes til desired consistency.  Enjoy :)

Avocado Rice and Spiced Chicken






     You know that experience of filling your mouth with the first bite of warm soft rice with chunks of fresh avocado and spiced chicken when you feel that inner voice go ahhhhh in your head and then smiles start bubbling thru your insides!?  I do ;)  If you want all the flavor with none of the guilt, you simply gotta try this dish at 300 calories, 21g net carbs and 25g protein!  Life will never be the same  :)

Ingredients~
1 Tablespoon EVOO
1 medium Onion, chopped
1 Tablespoon chopped jarred Garlic
Dash Cayenne
2 Tablespoons Taco Seasonings (more to taste, if desired)
2 cups prepared rice
1 medium Avocado
Chopped Roma, for garnish
Chopped Green Onion, for garnish
Low Carb Tortilla's if wish to make a wrap
Low Fat Sour Cream if desired
Low Fat Cheese if desired
Salsa if desired

     Bring EVOO to heat in skillet, add chopped Onion, Garlic and Cayenne til golden brown (may take 20-30 minutes), then add Chicken til cooked thoroughly, breaking apart into bite size pieces with spatula, sprinkle with Taco Seasonings and drain any extra juices.  While Chicken mixture is cooking, cook enough Rice to equal 2 cups prepared and peel Avocado.  Mix together Rice and Avocado, divide into 4 as well as the Chicken mixture and top Chicken mixture on top of each Rice mixture.  Garnish with Roma and Green Onion.  If you are looking for a heartier dish, you can turn this into a wrap with a Low Carb Tortilla and your favorite add-ins!  Enjoy  :)

Healthy Egg Salad Sandwich






     I sure love Egg Salad, Tuna Salad, and Chicken Salad...BUT, ... have always FEARED all the hidden surplus of calories!  What's a girl to do!?  Oh, I know... buy Walden Farms Amazin Mayo with zero calories and zero guilt!  How's that for having a good day!?  This hearty Egg Salad Sandwich can be yours for only 242 calories, 18g net carbs and 17g protein... not too shabby for a lunch with mayo AND bread!!!  :)

Ingredients for one Sandwich~
2 medium Eggs
1 Tablespoon Walden Farms Amazin Mayo
1 teaspoon Stone Ground Mustard
2 Sweet Midget Pickles, finely chopped
2 slices Sara Lee Delightful 45 calorie bread
Salt and Pepper to taste

     Bring 2 eggs and enough water to cover to boil in a saucepan, once boiling add the lid, turn off the heat leaving the pan on the burner and set the timer for 15 minutes and you will have a perfectly boiled egg when you hear the little ding of the buzzer go off!!!  Cool, peel, and chop Eggs~then stir in Walden Farms Mayo, Mustard, Pickles, Salt and Pepper to taste, finish by spreading on bread and enjoy!  Voila  :)
