Raspberry Sorbet

 

     If you are looking for a sugar free decadent rich frozen treat!?  Whelp, I have got you covered.  This is a fun easy project that will make you smile with every bite.  Did I mention sugar free as a huge added bonus, ...I just wanted to say it again?  And, check out these macros, for the entire serving it is only 140 calories, 20g carbs, 10g fiber, 10g net carbs, 2g protein and 6g fat.  Get crazy and make two at at time just for fun!  ;)

Ingredients for one serving~

6oz container Raspberries

1/3 cup lite Coconut Milk

     Add Raspberries to parchment lined cookie sheet, making sure they are not touching, put in freezer til frozen.  When ready, remove and add to heavy duty blender along with Milk, and whip til desired consistency.  Tip: may be necessary to soften Raspberries slightly to make blending easier, use your judgement.  Enjoy :)

Greek Yogurt Chicken




     If you are looking for a fast easy dinner, I have a quick fix that feeds a crowd.  Whip this one up in a jif, allow time for marinating, and let it cook by itself.  Your biggest decision will be what to do for a side.  I am voting Rice or Brussels Sprouts...or take a walk on the wild side and go with both!  Your other decision will be who to invite, or punt that idea and call it food prep for the weeks lunches.  ;)

Ingredients~

5.3oz container Fage Greek Yogurt

1 small Lemon, juice squeezed

1/4 cup Apple Cider Vinegar

2 Tablespoons Paprika or Smoked Paprika

1 Tablespoon chopped Garlic

1 Tablespoon Cumin

1 Tablespoon Dill Weed or Dill Seed

Small chopped Red Onion

Dash Cayenne

Boneless Skinless Chicken Breast (I use 3-4 pounds)

Cilantro for garnish if desired

     Put all ingredients except Chicken in gallon zip lock bag, smash to mix well, then add Chicken and rest in fridge for 2-12 hours.  Remove when ready to bake, pull out Chicken  and place on parchment lined baking sheet, bake at 400 for 45 minutes. Garnish with Cilantro if desired.  Enjoy ;)

Pineapple Right Side Up Cake

     Life is filled with choices, and this is an easy decision.  My sugar free Pineapple Right Side Up Cake will not leave you wondering.  You will be clear from the start that you are consuming health with every single bite!  Each of the generous 12 pieces are only 187 calories, 28g carbs, 4g fiber, 24g net carbs, 7.3g protein and 5.3g fat.  This is something that you can feel good about having yourself, or even more important feeding your family.  Isn’t it nice to know you really can have your cake and eat it too!?🍍

Ingredients for 12 servings~

3 extra large ripe Bananas

6 extra large Eggs

3 cups Oats, regular, not instant

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1 cut up fresh Pineapple to yield 3 cups, see my video for my one minute Pineapple trim~get link here πŸ‘‰πŸ» Trimming Pineapple πŸ‘ˆπŸ»

1/2 cup Blueberries

2 Tablespoons Pecans 

2 Tablespoons unsweetened Coconut 

     In mixing bowl, beat Bananas til smooth, add in Eggs til well incorporated, followed by Oats, and along with the Baking Powder, Cinnamon and Vanilla.  Stir in Pineapple and pour into parchment lined 9X13, top with Blueberries, Pecans and Coconut.  Bake at 375 for 35-40 minutes.  Store in fridge.  Enjoy πŸ˜‰

Mediterranean Sheet Pan Dinner



 


     Are you a fan of Sheet Pan Dinners?  So easy, so delicious, so little clean up.  All the things I love in one meal.  How can you go wrong!?  Follow along and see if this one speaks to every one of your senses.  The other bonus is this can be used to separate into four lunches, and meal prep for the week is practically done!πŸ₯˜ PS…the other bonus is a half pound of Shrimp per serving🍀

Ingredients for four servings~

Small head chopped Cauliflower 

1 cup Cherry Tomatoes 

Small chopped Red Onion

1 Tablespoon chopped Garlic

2 teaspoons Olive Oil

2 pounds raw XL Shrimp

1 bunch trimmed Asparagus

1 Lemon, cut in half

Feta Cheese Crumbles, if desired

Olives, if desired

     Add Cauliflower, Tomatoes, Onion, and Garlic to parchment lined sheet pan, drizzle with 1 teaspoon of the Olive Oil, toss to coat.  Put in oven at 450 for 30 minutes, remove, stir.  Add peeled Shrimp, Asparagus and remaining teaspoon Oil to bag to coat, spread on top of vegetables, put back in oven at 450 for another 15 minutes.  Remove and squeeze with fresh Lemon, and garnish with Feta and Olives (and any seasoning) if desired.  Enjoy πŸ˜‰ 

Mediterranean Dill Pickle Salad






     Do you fret about the perfect marinade!?  Whelp I have a fun twist to stir up in the kitchen.  The next time you are emptying out your Pickle Jar, don't throw away the juice!  Save it for the perfect Mediterranean twist on Chicken.  Hello mouth watering, not to mention using my Dill Pickle Seasoning for the perfect topping!πŸ₯—

Ingredients~
Left over Pickle Juice
Diced Chicken
Mixed Greens
Olives
Rice
Feta Cheese (optional)
7 Herb Italian Balsamic from California Balsamic (optional)

     Add Juice to Chicken to marinate for atleast an hour, drain and pour directly into skillet and cook til done.  Meanwhile, add rest of ingredients to Salad Bowl and top with cooked Chicken.  Finish with a Vinegar and Oil Dressing, or my favorite is the 7 Herb Italian Balsamic from California Balsamic.  Enjoy :)

Dill Pickle Seasoning





     Are you a Dill Pickle lover?  No shame in your game, but I have a way to take it to the next level with a fun project in the kitchen!  So pay attention and you will have Dill Pickle Seasoning in no time flat... about 6 hours!  Very simple, and extremely unique.  Involve your kids, they will think this is a blast!  Keep readin'...

Ingredients for Seasoning~
16oz jar of Dill Pickles, do more if you wish

     Drain juice, set aside.  Meanwhile add Pickles to parchment covered cookie sheet, it will fill a cookie sheet completely.  Place in oven at 175, crack the door open with a wooden spoon or hot pad.  After 6 hours, remove and cool, add to small baggie, crush with rolling pin, snip corner of baggie and store in small glass jar.  Use the Pickle juice as a marinade for Chicken, marinate about an hour, drain and cook in skillet.  Enjoy :)

     Not only does my Pineapple Ice Cream consist of two ingredients, it is also sugar free...and did I mention easy and DELICIOUS!!!  We just got back from visiting Disney Land and the famous Dole Whip is everywhere.  I vowed to get home and make a healthy version, and I don't mind saying it was a huge success.  In fact, side by side, I would choose mine any day of the week!  So, why don't you try it for yourself and see if you agree!  Living healthy, and having fun, ...all day everyday!  Enjoy the entire serving for only 132 calories, 22g carbs, 2.3g fiber, 19.7g net carbs, .9g fat, and 5.2g fat.🍍

Ingredients for one serving~

1 fresh Pineapple (trimmed and chopped~ see my video on how to trim in one minute)  Watch trimming tips hereπŸ‘‰πŸ» Trimming Pineapple πŸ‘ˆπŸ»

1/3 cup Lite Coconut Milk

     Make sure Pineapple has been diced to small bite sizes, measure out a cup and lay on parchment lined cookie sheet, making sure fruit not touching.  Set in freezer til frozen.  When ready, remove, and add to heavy duty blender, pour Milk in blender and whip til desired consistency.  Enjoy πŸ˜‰
