Mexican Summer Salad

     I just love Mexican food, and even better when I can enjoy it meatless.  For a fun warmer weather twist, I sub Sweet Potatoes instead of meat for a lighter flair.  This salad is filled with suggestions vs rules, and you can create your own Picaso with my ideas.  So give my Mexican Summer Salad a whirl, and see if you will be shouting ole' by the last bite!

Ingredients~

Diced Sweet Potato

Olive Oil

Spices (I use Salt, Pepper, Garlic and Chili Powder, ...these are just suggestions)

Mixed Green (I use Romaine, Kale, Broccoli, Carrots and Red Bell Pepper)

Black Beans

Avocado

Salsa

Cilantro

Rice (optional)

Corn (optional)

     Toss Potatoes and Oil, put on parchment lined cookie sheet, season as desired, bake at 425 for 40-45 minutes, stir half way thru.  Hopefully you make enough to use all week, top cooled Potatoes on Mixed Green Salad, along with Avocado, Salsa, and Cilantro.  If desired, add cooked Rice and Corn.  My trick for Corn is to buy it in the husk and microwave it for 2 minutes, cool and peel off husk, and you will have the perfect "Ear on your Hands".  #seewhatididthere  Here's my other hot tip, I do not use any Dressing because I find the Avocado and Salsa plenty to coat the Greens.  Enjoy  :)

Vegan Summer Salad

     In the warmer weather it is nice to keep the house cool and your belly satisfied.  I have a way to have it all.  Whelp, you do have to heat up the oven once, but that will be it for the week.  With my Vegan Summer Salad, it will be a joy to sit down to lunch and float away with each and every bite.  Nothing better than enjoying a meatless meal filled with nutrition.  :)

Ingredients~

Diced Sweet Potato

Olive Oil

Seasonings as desired (I used Salt, Pepper, Garlic, Chili Powder as options)

Mixed Salad Greens (I use Romaine, Kale, Broccoli, Carrots, Red Bell Peppers)

Diced fresh Pineapple (sub with pre made, and check out my trimming video Trim a Pineapple in one Minute )

Blueberries

Feta Cheese (sub with favorite Vegan Cheese)

Pumpkin Seeds or Pistachio Nuts

Sliced Avocado

Balsamic Vinegar

     Toss Potatoes with Oil and roast on parchment lined cookie sheet, season as desired, bake at 425 for 40-45 minutes, stir half way thru.  Hopefully you made a sheet full, and can use them thru out the week.  Prepare your Greens, top with cooled Potatoes, Pineapple, Blueberries, Cheese and Seeds or Nuts.  Now, when it comes to the Avocado, here is the big bonus.  I won't use any Dressing if I use the Avocado because it is creamy enough to cover the Salad, but if you want you can use a scant drizzle of Balsamic, or use the Balsamic and omit the Avocado.  You do you Boo.  These are just options along with everything else on this list, add more or less of anything, my only rule is to ENJOY!  :)

Sugar Free Vanilla Ice Cream

 I scream, you scream, we all scream for Ice Cream!!!  Settle down settle down, no reason to yell.  Although, what I am going to share will make you squeal with glee!  This Sugar Free Vanilla Ice Cream is a home run for summer fun, …heck even for breakfast!  So simple, so quick, so satisfying.  Each serving is only 139 calories, 24g carbs, 2g fiber, 22g net carbs, 1g protein and 5.3g fat.  If you want to be real industrious, prep several at a time.  Enjoy 🍨

Ingredients for one serving~

1 small to medium Banana

2-3 Tablespoons Lite Coconut Milk

     Slice Banana into discs and lay on parchment lined cookie sheet, I also cut my disc’s in half, put in freezer til solid.  Remove when ready, add to blender along with Milk and whip til desired consistency.  Voila, it’s Ice Cream!!!  Enjoy 🍦

Two Ingredient Blackberry Ice Cream

When Summer time hits, it’s a good time to have healthy snack ideas on hand…especially ones that are simple and sugar free.  My Two Ingredient Blackberry Ice Cream lacks nothing except consumption.  Each serving is only 112 calories, 14g carbs, 7.6g fiber, 6.4g net carbs, 2g protein and 5.7g fat.  This is so fun to make, it would be good to involve the kids.  And, it is so healthy, you could actually have it for breakfast, without guilt!  Enjoy 😉 

Ingredients for one serving~

6 oz fresh Blackberries

1/3 cup Lite Coconut Milk

     Add Blackberries to parchment lined cookie sheet, not touching, and set in freezer til solid.  When ready, remove (I thawed mine slightly), add to heavy duty blender like a Magic Bullet or NutraBullet, along with Milk, whip to desired consistency.  Consume right away.  Enjoy 😊

Raspberry Sorbet

 

     If you are looking for a sugar free decadent rich frozen treat!?  Whelp, I have got you covered.  This is a fun easy project that will make you smile with every bite.  Did I mention sugar free as a huge added bonus, ...I just wanted to say it again?  And, check out these macros, for the entire serving it is only 140 calories, 20g carbs, 10g fiber, 10g net carbs, 2g protein and 6g fat.  Get crazy and make two at at time just for fun!  ;)

Ingredients for one serving~

6oz container Raspberries

1/3 cup lite Coconut Milk

     Add Raspberries to parchment lined cookie sheet, making sure they are not touching, put in freezer til frozen.  When ready, remove and add to heavy duty blender along with Milk, and whip til desired consistency.  Tip: may be necessary to soften Raspberries slightly to make blending easier, use your judgement.  Enjoy :)

Greek Yogurt Chicken




     If you are looking for a fast easy dinner, I have a quick fix that feeds a crowd.  Whip this one up in a jif, allow time for marinating, and let it cook by itself.  Your biggest decision will be what to do for a side.  I am voting Rice or Brussels Sprouts...or take a walk on the wild side and go with both!  Your other decision will be who to invite, or punt that idea and call it food prep for the weeks lunches.  ;)

Ingredients~

5.3oz container Fage Greek Yogurt

1 small Lemon, juice squeezed

1/4 cup Apple Cider Vinegar

2 Tablespoons Paprika or Smoked Paprika

1 Tablespoon chopped Garlic

1 Tablespoon Cumin

1 Tablespoon Dill Weed or Dill Seed

Small chopped Red Onion

Dash Cayenne

Boneless Skinless Chicken Breast (I use 3-4 pounds)

Cilantro for garnish if desired

     Put all ingredients except Chicken in gallon zip lock bag, smash to mix well, then add Chicken and rest in fridge for 2-12 hours.  Remove when ready to bake, pull out Chicken  and place on parchment lined baking sheet, bake at 400 for 45 minutes. Garnish with Cilantro if desired.  Enjoy ;)

Pineapple Right Side Up Cake

     Life is filled with choices, and this is an easy decision.  My sugar free Pineapple Right Side Up Cake will not leave you wondering.  You will be clear from the start that you are consuming health with every single bite!  Each of the generous 12 pieces are only 187 calories, 28g carbs, 4g fiber, 24g net carbs, 7.3g protein and 5.3g fat.  This is something that you can feel good about having yourself, or even more important feeding your family.  Isn’t it nice to know you really can have your cake and eat it too!?🍍

Ingredients for 12 servings~

3 extra large ripe Bananas

6 extra large Eggs

3 cups Oats, regular, not instant

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1 cut up fresh Pineapple to yield 3 cups, see my video for my one minute Pineapple trim~get link here 👉🏻 Trimming Pineapple 👈🏻

1/2 cup Blueberries

2 Tablespoons Pecans 

2 Tablespoons unsweetened Coconut 

     In mixing bowl, beat Bananas til smooth, add in Eggs til well incorporated, followed by Oats, and along with the Baking Powder, Cinnamon and Vanilla.  Stir in Pineapple and pour into parchment lined 9X13, top with Blueberries, Pecans and Coconut.  Bake at 375 for 35-40 minutes.  Store in fridge.  Enjoy 😉
