Mango Black Bean and Quinoa Salad








     What better way to celebrate all the fun flavors of summer than to combine them in one bowl and label it a salad !!!???  Genius  ;)  Each cup runneth over with 164 calories, 20g carbs and 6g protein.  Couple this with a nice grilled Salmon or Chicken and create the perfect party on your plate !!!  ;)

Ingredients~
1 cup Quinoa
15oz can Black Beans, drained
2 ears Olathe Sweet Corn, or any Sweet Corn, cooked and cut from cob
1 Red Bell Pepper, diced
1 Mango, peeled and diced
6 Green Onions, diced
1 bunch of Cilantro leaves
Dash Sriracha
2 Tablespoons Lime Juice
1 Tablespoon EVOO
Dash Garlic
Dash Chili Powder
Dash Cumin
Dash Salt
Dash Pepper

     Bring 2 cups water and cup of Quinoa together to a simmer covered for 15-20 minutes, or til water cooked off, cool and set aside.  Combine Quinoa, Black Beans, Corn, Bell Pepper, Mango, Green Onions, and Cilantro.  In another small bowl combine Sriracha, Lime Juice, EVOO, Garlic, Chili Powder, Cumin, Salt and Pepper, then pour over Quinoa mixture and blend thoroughly.  Serve and Enjoy  ;)
