Banana Nut Sweet Potato Chocolate Chunk Cookies










     Never underestimate the power of the "leftovers" ...  Eureka is the recipe that is derived from an over ripening Banana and Sweet Potato that had been pushed to the back of the fridge and ignored like a recent "ex" ...Throw in a few more key ingredients and you have a health mecca of a cookie on your hands !!!  This recipe makes 30 hefty cookies, each being 43.5 calories, 3g carbs, and 4.3g protein!!!  These are off the charts in natural sweet flavors, and melt in your mouth lusciousness!!!  Can't go wrong making these for your next cookie fix !!!  Add a Quest Bar to any cookie and you have a cookie monster quality cookie!!!  ;)

Ingredients~
1/2 cup Oats, ground in Magic Bullet til powdered
1/2 cup ground Flax
1/2 cup liquid Egg Whites
1 small baked and cooled 8oz Sweet Potato, mashed
1 small 4oz Banana, mashed
2 scoops Vanilla Isothority Protein Powder
Dash Salt
Dash Cinnamon
Dash Vanilla
1 teaspoon Baking Powder
Banana Nut Muffin Quest Bar, diced into small pieces
Double Chocolate Chunk Quest Bar, diced into small pieces

     After grinding Oats in Magic Bullet to powder, add to mixing bowl.  Add the remaining ingredients to bowl, stir til mixed thoroughly.  Drop by Tablespoon on Silpat lined Cookie Sheet, bake at 350 for 10 minutes.  Cool and Enjoy  ;)
