Garlic Chicken Asparagus Stir Fry







     If you are looking for your next healthy dinner, look no further, have I got a deal for you!  Garlic Chicken Asparagus Stir Fry screams "I'm good for you, eat me"!  Each hearty serving is only 220 calories, 7g net carbs and 28.6g protein.  With 6 awesome servings, you might get lucky and have left overs for lunch!

Ingredients for 6 large servings, each serving topped with 1 Tablespoons Parmesan~
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon chopped Garlic
1 sweet yellow Onion, chopped
Dash Cayenne Pepper
1.5 pounds boneless skinless Chicken Tenders or Breasts, diced
8oz sliced Mushrooms
4 asst. Bell Pepper~Red, Green, Yellow and Orange, seeded and sliced
2 bundles Asparagus, trimmed and diced
6 Tablespoons shredded Parmesan

     Heat EVOO in skillet, add Garlic, diced Onion and Cayenne til golden brown.  Add diced Chicken til cooked thru, add Mushrooms til cooked, and finish by adding sliced Bell Pepper and Asparagus til crisp tender (may want to add lid to aid in steam cooking).  Serve in 6 equal portions, topping each portion with a Tablespoon shredded Parmesan.  Enjoy  :)
