Lemon Frosted Lemon Cupcakes

     When life gives you Lemons, ....make Lemon Frosted Lemon Cupcakes! ( ...nobody cares about Lemonaide...)  These sweet tart wonders are perfect for a special occasion or every day of the week...which is nice because I plan on having one every day this week!  Each of the 6 generous Cupcakes are only 149 calories, 3.6g net carbs and 12.3g protein.  Oh, and, make sure you are eating these next to your sweetheart because in case you pucker up we don't want it to go to waste...  <3

Ingredients for Frosting for 6 large Cupcakes~
7oz 2% Fage Greek Yogurt
1/4 cup Swerve Confectioners Erythritol
1/2 scoop Quest Salted Caramel Protein Powder
1 Tablespoon Lemon Juice
Yellow Food Coloring, to desired color

Ingredients for 6 large Cupcakes~
1/4 cup Coconut Oil, melted
1 jumbo Egg
1/2 cup 30 calories/cup Almond Milk
1 scoop Quest Salted Caramel Protein Powder
1/4 cup Coconut Flour
1/4 cup Swerve Confectioners Erythritol
2 Tablespoons Lemon Juice
1 Tablespoon Nielsen Massey Lemon Extract
1 teaspoon Baking Powder
Sprinkles for garnish, if desired

     Mix all Frosting ingredients til smooth and well blended, chill in fridge til ready to frost.  Next, blend all Cupcake ingredients and pour equally into 6 Silpat lined Cupcake Tin and bake at 375 for 18 minutes.  Remove, cool, frost and garnish with Sprinkles if desired.  Enjoy  :)
