Sunflower Seed Protein Fudge







     What's more all American than Sunflower Seeds!?  Being the Patriot that I am, I had no choice but to turn an all time favorite into a new time favorite and make a little Fudge.  Each of the 6 hearty servings are only 218 calories, 3.8g net carbs and 17.6g protein.  So wave the Flag and get to work in the kitchen, getting America healthy one bite at a time with Sunflower Seed Protein Fudge!  ;)

Ingredients for 6 hearty servings~
1/3 cup Coconut Butter, softened
4 scoops Quest Salted Caramel Protein Powder
1 cup 30 cal/cup Blue Diamond Almond Milk
1/4 cup + 2 Tablespoons shelled Sunflower Seeds
1/4 cup Swerve Confectioner Erythritol
1/2 teaspoon Pink Himalayan Salt or regular Salt
Dash Cinnamon
Dash Vanilla
1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips
(1-2 Tablespoons Nutiva Coconut Flour, if batter is too sticky)

     Mix all ingredients, except 2 Tablespoons Sunflower Seeds and Chocolate Chips, remember to stir in Coconut Flour if batter is too sticky.  Pat into parchment lined 8X8 and sprinkle top with remaining 2 Tablespoons Seeds and Chocolate Chips and pat down slightly.  Refrigerate over night.  Slice into 6 equal portions and cut into squares.  Enjoy  :)
