St. Patricks Day Cupcakes







     Hey you, ... wanna get lucky...!?  Of. Course. You. Do....who doesn't... :/  Fortunately, this doesn't involve anything immoral or fattening, ... (or unfortunately depending on how you look at things).  As luck would have it, each of these moist DELICIOUS Holiday cupcakes are only 149 calories, 3.6g net carbs and 12.3g protein.  Any Leprechaun would be doing a happy dance to find these waiting at the end of their St Patricks rainbow!  ;)

Ingredients for 6 hearty Cupcakes~
1/4 cup melted Coconut Oil
1 Extra Large Egg
1/2 cup 30 cal/cup Almond Milk
1 scoop Quest Salted Caramel Protein Powder
1/4 cup Coconut Flour
1/4 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

7oz 2% Fage Greek Yogurt
1/2 scoop Quest Salted Caramel Protein Powder

Green Food coloring, to desired color

     Stir together first set of ingredients and divide evenly into 6 silpat lined cupcake tins, bake at 375 for 17 minutes.  Meanwhile, stir together second set of ingredients til smooth and the color of green that makes you feel "lucky", set in fridge to chill til set.  When cupcakes have cooled after baking, frost and Enjoy  :)
