Avocado Salmon Salad

 





     Looking for the perfect lunch or dinner, especially knowing it comes together lickity splicity!?  And all less than 500 delicious calories!!!  This is great for warmer weather fare, yet compliments all season.  Each of the four servings are only 447 calories, 50g carbs, 6.8g fiber 43.2g net carbs, 27.5g protein and 14.5g fat.  This is so amazing, it could even impress at any dinner party!  Who would you invite?

Ingredients for 4 servings~

1 pound Salmon

Seasoning as desired

1 cup White Rice

2 cups Water

2 cups shredded Carrots

2 English Cucumbers, chopped

2 small (about 7 oz total) ripe sliced Avocado

1 Bell Pepper, chopped

Sliced Purple Onion, as garnish if desired

4 Tablespoons California Balsamic, if desired, not included in macros, I used Ruby Red Onion Balsamic

     Season Salmon as desired, bake at 425 for 18-20 minutes.  Meanwhile, add Rice and Water to saucepan, bring to boil, reduce to simmer, add lid and simmer for 15 minutes, or til water is absorbed.  Divide Salmon and Rice into 4 equal potions, add to individual bowls, along with 1/4 of the remaining ingredients.  Season as desired, dress with Balsamic if desired, however not included in macros.  Enjoy 😊
