Coconut Cashew Cake





  With every bite of Coconut Cashew Cake it will take you to a tropical paradise.  Ok ok, that’s a stretch, but still…. This is not an overly sweet snack, so a layer of nut butter may be invited, or if your taste buds have evolved off sugar, it may just be perfect!  You will just have to try it and see where your tongue is on the spectrum.  Each of the 8 pieces are only 265 calories, 34g carbs, 4.5g fiber, 29.5g net carbs, 11g protein and 11g fat.  These are great macros, and even better news it is fun to make!!!  ;)

Ingredients for 8 servings~

3 ripe medium mashed Bananas

6 Extra Large Eggs

1/2 cup/4oz Unsweetened Applesauce

3 cup Oats

1/4 cup plus 1 Tablespoon Unsweetened Shredded Coconut

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1/4 cup/1.25oz broken Cashews

     Add Bananas to mixing bowl and mix til smooth, add in Eggs and Applesauce til well blended, finish with adding in Oats, 1/4 cup Coconut, Baking Powder, Cinnamon, and Vanilla, and pour into 7X11 baking dish, top with remaining Coconut and Cashews, bake at 375 for 25-30 minutes.  Enjoy :)
