Cream Cheese Frosted Fudge Stuffed Cupcakes
This little humdinger will satisfy all your dessert and health desires in each and every bite!!! It's GENIUS!!! Not only is it genius but its only 95 calories for each cupcake with a Tablespoon of frosting, 7.6g net carbs, and 8.6g protein. This recipe makes 16 cupcakes. You will fall more in love with each and every bite ;)
Ingredients~
6oz Zucchini, diced
2oz Banana, diced
3oz Apple, diced
1/2 cup Egg Whites
2/3 cup Bob's Red Mill Oat Flour
3/4 cup Garbanzo Beans
2 scoops Quest Salted Caramel Protein Powder
Dash Salt
Dash Cinnamon
Dash Betterbody Foods Vanilla
2 Double Chocolate Chunk Quest Bars, each cut into 8 pieces~totaling 16 pieces
16 Tablespoons Cream Cheese Frosting, recipe below
Place all the ingredients except the Bars and the Frosting in Food Processor and blend thoroughly. Pour equally in Silpat lined cupcake tin. Place each Quest Bar piece in the middle of each cupcake and press down into bottom of batter, bake at 350 for 17 minutes. Remove, cool, and top each Cupcake with a Tablespoon of Frosting. Enjoy ;)

Ingredients for Cream Cheese Protein Frosting~
1 scoop Quest Salted Caramel Protein Powder
4oz Fat Free Cream Cheese, softened to room temperature
1/4 cup Low Fat Cottage Cheese
2 Tablespoons Betterbody Foods Coconut Flour
1 Tablespoon Sugar Free Cheesecake Jello Pudding mix
1/3 cup Swerve Confectioners Erythritol
1/2 cup of 30 cal/cup Blue Diamond Almond Milk
10 drops French Vanilla Stevia (optional)
Dash Cinnamon
Dash Betterbody Foods Vanilla
Blend all together in Magic Bullet. Set in fridge to chill and thicken. This makes 1 1/2 cups, each Tablespoon has 16.9 calories, 1.3g net carbs, 2g protein. Enjoy ;) PS THIS IS GOOD !!!!
