Sweet Sugar Bread

     I will be the first to admit that Protein Powder Products are an acquired taste... that's no secret.  But, ... once you have refined your taste buds, you are in for a world of health like no other.  I can proudly announce that the change process has finally set in on my husband as he is starting to enjoy all my new dishes!  ( I knew he would buckle sooner or later ... )  And, if you keep at it, you will learn to LOVE the world of Protein Powder too!!!  With the new creation of Quest's Multi Purpose Protein Powder the options of healthy foods are limitless!!!  Try out my bread and see if you agree with me!!!  For an 1/8 loaf, it is 120 calories, 6g net carbs and 21g protein.  Life just keeps getting better ;)

1pkg Quick Rise Yeast
1/4 cup Hot Water
1/4 cup Coconut Sugar, found at
2 Tablespoons melted Coconut Oil, found at
1 Jumbo Egg
2/3 cup Egg Whites
1/2 cup Plain Rice Protein Powder, found at
1/4 cup Whole Husk Psyllium, found at
1/2 teaspoon Salt
Spray Butter
Erythritol, found at

     Blend Yeast, Hot Water, and Coconut Sugar in bowl til all melted and blended.  Add Coconut Oil, Egg, Egg Whites, Quest Protein Powder, Rice Protein, Psyllium and salt, stirring thoroughly.  Cover bowl with a hand towel and rest for an hour in a draft free warm environment.  Pour into greased and parchment lined loaf pan.  Bake at 325 for 30 minutes.  You may notice that the top middle portion of the bread still appears moist, but I have learned that a smidgen of under baking yields more moisture in the end result, along with better flavor.  It also will continue to set up as it cools.  Trust me on this one!  Spray the top with a few spritz of Spray Butter and finish it off with a sprinkle of Erythritol on top of the loaf!!!  Enjoy  ;)
