Triple Decker Mint Brownies seem to surface every year during the Christmas Season, so I thought I would see what I could do to whip together a healthy version. You can't see this from home, but I am currently patting myself on the back ... which makes it harder to type...so I will stop congratulating myself for now and get on with the good stuff. To start with, this batch makes nine Brownies, each one is 133 calories, 9g net carbs and 17.7g protein. To end with, these are delicious!!! Yeah for Protein Baking ;)
Ingredients for Brownie~
Brownie Quest Bar
1/2 cup Almond Milk, I use the 30 cal/cup
2 scoops Chocolate Molten Cellucor Protein Powder, found at Vitacost.com
1/3 cup Oat Bran or Oat Flour, found at Vitacost.com
1/4 cup unsweetened Cacao Powder, or Cocoa Powder, found at Vitacost.com
5.3oz Greek Plain or Vanilla Yogurt
1/2 cup Egg Whites
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
Dash Salt

1/2 cup Cream Cheese Frosting ( recipe below)
1/2 teaspoon Mint Extract
2-3 drops Green Food Coloring
1/4 cup Fudge Glaze ( recipe below)
14gms or 60 chips of Lily's Stevia Sweetened Dark Chocolate Chips for garnish, found at Vitacost.com
Tear Quest Bar into pieces and stir together with Almond Milk and microwave for 30 seconds, stirring til smoothly melted together. Re-microwave if necessary. Add remainder of ingredients to bowl, stirring to blend and pour into Pam coated 8 X 8 pan and bake at 350 for 15-17 minutes. Slightly under bake as over baking tends to REALLY dry these Brownies out. Remove, cool and chill in fridge til ready to frost so the brownies are firm enough to spread with frosting. Mix Cream Cheese Frosting with Mint Extract and Food Coloring, frost Brownies with Cream Cheese Mint Frosting ( may have to set in freezer to harden a few minutes to prepare for Fudge Glaze), gently spread with Fudge Glaze and top with Chocolate Chips. Store in fridge...if there is any left. Enjoy ;)

1 scoop Gold Standard French Vanilla Casein Protein Powder ( purchased at Vitacost.com)
4oz Fat Free Cream Cheese, softened to room temperature
1/4 cup Low Fat Cottage Cheese
2 Tablespoons Coconut Flour
1 Tablespoon Sugar Free Cheesecake Jello Pudding mix
1/3 cup Erythritol, found at Vitacost.com
1/2 cup of 30 cal/cup Almond Milk
10 drops French Vanilla Stevia
Dash Cinnamon
Dash Vanilla
Blend all together in Magic Bullet. Set in fridge to chill and thicken. This makes 1 1/2 cups, each Tablespoon has 16.9 calories, 1.3g net carbs, 2g protein. Enjoy ;) PS THIS IS GOOD !!!!

10 Dark Chocolate Stevia Drops
Stir Chips and Milk in microwave safe bowl and heat for 20 seconds, stirring til melted and smooth. Continue to heat if necessary. Stir in remaining ingredients. Bring close to room temperature to keep spreadable, may have to re heat to get the right consistency to spread easily. Makes a 1/4 cup, and is 158 total calories, 9.4g net carbs and 14g protein.
