Kale, Fruit, Nuts, Cannellini, Avocado, Salmon, Parmesan Salad






      Do you ever get in that mood to start throwing things together and just let the "chips" fall where they may !!!???  Such was the case this evening when putting this baby together, and it turned out fantastic !!!  I won't be able to do the calories on this because of too many variables, just know that it is all fresh healthy ingredients.  Enjoy experiencing new flavor combinations, and feel free to create your own.  I have served this with home made Onion Focaccia bread, and will be sharing that recipe as well.  ;)

Ingredients~ ( Divide all these ingredients into two servings)
2 Large stems of Kale Leaves, torn and plated on two plates
1/2 cup Cannellini Beans, divided among two plates
2 Tablespoons dried Apricots diced, divided among two plates
2 Tablespoons dried Dates diced, divided among two plates
1/2 fresh Pear diced, divided among two plates
1/2 fresh Avocado diced, divided among two plates
2-4oz Grilled Salmon, divided among two plates
1 Green Onion, diced and divided among two plates
1 Tablespoons chopped or sliced Almonds, divided among two plates
1 Tablespoon shaved Parmesan, divided among two plates

     Arrange all ingredients on Salad Plates in order of ingredients and top with a Tablespoon of Dressing.  Enjoy  :)

Ingredients for Dressing~
2 Tablespoons Lemon Juice
2 Tablespoons EVOO
Dash of Stevia, Truvia to taste
Salt and Pepper to taste

     Whisk to combine, divide in two and top each salad with dressing.  Enjoy  ;)
