Pasta Carbonara

     Have you ever substituted Spaghetti Squash for Spaghetti!!!???  I just LOVE LOVE LOVE it !!!  Especially when you can simply turn it into Pasta Carbonara !!!  Come along with me and enjoy turning a decadent dish into a healthy must !!!  ;)

1 Spaghetti Squash, cut in half and seeded ( ask the guy in the produce section if he will cut this in half for you before you leave the store, he has the big tools and it will spare you potentially loosing a digit at home ...)
1-2 Tablespoons EVOO
Large Yellow Onion, diced
Tablespoon chopped jarred Garlic
Dash Cayenne
4 slices Turkey Bacon, diced~ best if you buy this from Fresh Market in the Meat case
1 carton sliced fresh Mushrooms
3 Roma Tomatoes, diced and drained on paper towels for as many hours as possible
2 Eggs, whipped with fork
2 Tablespoons shredded Mozzarella
1/4 cup shredded Parmesan
Dash Salt
Dash Pepper

     Put de seeded Squash halves face down on foil lined pan and bake at 400 for 45 minutes. Meanwhile, heat EVOO in skillet and add diced Onion, Garlic and Cayenne Pepper and cook til golden brown, may take 20-30 minutes, stirring often.  Then add Bacon and continue cooking til cooked thoroughly, then add sliced Mushrooms and cook til done, and turn down skillet to just keep warm til Squash is finished.  When Squash is finished cooking, flip halves face up and use fork to fluff strings from sides and put one stirred egg in each half and stir to combine.  Return to oven on broil til browning around edges.  Remove and add half of Mozzarella to each half, then add half Onion mixture to each Squash, then top each half with 2 Tablespoons Parmesan, followed by half of Roma on each.  Top with Salt and Pepper.  Enjoy  ;)
