Low Carb Shrimp Avocado Taco's









     Shrimp + Avocado + Taco = Love + Joy + Happiness !!!  My new Tortilla find has sent me over the Moon !!!  La Tortilla Factory Flour Low Carb Tortilla's are soft and chewy for 70 calories, 6g carbs and 5g protein...Move over Mamma Lupe, their is a new Lady of the house !!!  So what is the obvious filler, Shrimp, Avocado, Tomatoes and Corn!!!  ;)

Ingredients~
1 Tablespoon EVOO
1 heaping teaspoon chopped jarred Garlic
Large Yellow Onion, diced
Dash Cayenne Pepper
1-2 pounds uncooked shelled Shrimp
Dash Lime juice, to taste
Fat Free Refried Beans
Avocado Slices
Diced Tomatoes
Shredded Cheese
Diced Green Onion
Salsa
Corn on the Cob, cooked and cut from Cob

     Heat EVOO in skillet, and add Onion, Garlic and Cayenne til golden brown, may take up to 20 mintues.  Add Shrimp and cook til pink, then add Lime Juice to pan and combine thoroughly. Spray Skillet with Pam and wet each side of shell with Pam and fry til golden brown on each side.  Fill with Refried Beans, Cheese, Shrimp, Avocado Slices, Tomato, Green Onion and Salsa.  Enjoy  ;)
