Shrimp Avocado Parmesan Italian Salad

     Oh.My.Goodness !!!  These ingredients married together so beautifully this evening that I would never consider a divorce !!!  Easy to throw together and filled with nutritious ingredients !!!  High Protein, High Fiber, Low Fat, Low Carb~ I call that a winning combination !!!  Enjoy  ;)

1 Large Yellow Onion, diced
1 Tablespoon EVOO
Dash Cayenne, to taste
Desired amount of uncooked, shelled large Shrimp
Dash Lime juice, to taste
Large Avocado, sliced
Roma Tomato, diced and drained on paper towel during the day
Corn on the Cob, cooked and shaved kernels off the cob
Green Onion, diced
Shredded Parmesan, desired amount for garnish
Kraft Roasted Red Pepper ( 30 calories/2 Tablespoons~ LOVE LOVE LOVE this stuff!!!)
Salt and Pepper to taste
Mixed Green Salad of Romaine, Kale, Green Onions, diced Baby Carrots, and Cilantro

     Heat EVOO in skillet and add Onion, Garlic, and Cayenne to cook til golden brown, may take 20 minutes, be patient for best results of the perfectly sauteed onion !!!  ;)  When ready add Shrimp til cooked thru and add Lime juice to your taste.  Remove from heat.  Plate your Salad Greens, and top with Shrimp mixture, then lay Avocado slices on top, followed by Tomato, Corn Kernels, Green Onion and Parmesan.  Finish with Dressing and Salt/Pepper to taste.  Enjoy this mellow combination!!!  ;)
