Chicken Nuggets


     Does your family continually bug you for "good food" ... and by "good", I mean from the drive thru where the grease has leaked thru and left a slick circular stain where the fat has seeped thru layers of foil covered burgers and fries ...  :0 ... Welp, offer them Chicken Nuggets and regain your popularity !!!  ;)

Ingredients~
1 pound boneless skinless chicken tenders, cut into fourths
1/2-2/3 cups almond flour ( grind your own almonds in a Magic Bullet for one minute)
dash pepper
dash cayenne
dash garlic powder
egg whites for dipping, seasoned with pepper
1 Tablespoon Coconut Oil
dash salt

     Season your flour with salt, pepper, cayenne and garlic and set on a plate.  Pour egg whites in a bowl and add pepper and chicken pieces to thoroughly coat.  Meanwhile heat coconut oil in skillet til hot.  When ready roll egg covered chicken pieces in flour and put in skillet for about 5 minutes on each side or until browned on each side.  When finished, if chicken is not cooked thru then, put chicken on foil covered cookie sheet and finish baking at 350 for 15-20 minutes. Sprinkle with additional light salt if necessary.  I served this with a home made avocado mayonnaise.  Enjoy  ;)
