Shrimp with Zucchinni, Carrots, Mushrooms and Parmesan

      I just love Shrimp, and even more with a little stir fry veggies !!! So why not shred up some zucchini and carrots and give it a pasta feel !?  I was able to whip this together in a jif and it turned out terrific !!!  Experiment and use any veggies that strike your fancy !!!  Super yummy  ;)

1 pound shelled shrimp
2 zucchini ~ shredded
3 or 4 large carrots~shredded
1 large yellow onion
8oz sliced mushrooms
1 Tablespoon chopped jarred garlic
1 Tablespoon EVOO
Dash of Sriracha, to desired taste
Dash Salt
Dash Pepper
Chopped Roma Tomato
Chopped Purple onion for topping
Shredded Parmesan for topping

     Saute onion, garlic, sriracha and salt in 1 Tablespoon EVOO in hot skillet til golden brown.  Add mushrooms and cook thoroughly, then add shrimp til pink.  Then add carrots and cook til softened, add zucchini til soft and serve.  Top with tomato, onion and parmesan.  Enjoy ;)
