Coconut Rice with Picadillo





     A very simple lunch or light dinner is to put 1/3 cup Coconut Rice in a Bowl, top with 1/2 cup Picadillo, then finish off with Cilantro leaves and Carrot shreds. All for about 300 calories.  Refer to the Coconut Rice and Crock Pot Picadillo for specific recipes from yesterday.  Enjoy  :)
