Peanut Butter Cheesecake















     Don't cha just love it when you come up with something fantastic and good for you!?  That's how I feel about this Peanut Butter Cheesecake with Quest Bars !!!  I saw a cheesecake recipe from Quest that inspired me to set out to create something with Peanut Butter, ... certainly you can understand that desire !!!  ;)
Even better news, the Nutritional Stats for this 9" Spring Form pan, gives you 8 servings at 195 calories, 10g carbs, and 24.5g protein.  ( ... go ahead and have this cake for breakfast if you want ;)

Ingredients~
2 Chocolate Peanut Butter Quest Bars
Butter Pam
2 1/2 cups Fage 0% Greek Nonfat Yogurt
1 cup Liquid Egg Whites
1/2 cup PB2
1/2 cup Vanilla Protein Powder ( Peanut Butter Cookie Protein Powder would be a GREAT substitution, but I didn't have any on hand)
1/4 cup Date Sugar
1 Peanut Butter Quest Peanut Butter Cups, crumbled
Dash Cinnamon
Dash Paige's Handcrafted Vanilla
Diced Strawberries for garnish

     Heat the Chocolate Peanut Butter Quest Bars for 15 seconds each, 1 at a time.  After heated, pat the bar in half a Pam coated bottom portion of Spring Form pan that the bottom has been removed, making it easier to work with. When finished, repeat with other bar, patting out on the remaining half, then put the bottom back in the Spring Form Pan and latch to prepare to fill.  Blend in mixing bowl, egg whites, yogurt, protein powder, PB2, sugar, cinnamon and vanilla. Stir til thoroughly blended and pour in pan.  Bake at 325 for 40 minutes, or til firm with slight wobble.  Remove and immediately sprinkle with Peanut Butter Cup crumbles. Cool, then place in refrigerator overnight.  Garnish with diced Strawberries if desired.  Enjoy ;)
