Edamame Hummus








Fresh Hummus just cant be beat !!!  AND, now there is a way to make it even more healthy using Edamame instead of Garbonzo Beans.  Also, check out my homemade Tortilla recipe for low calorie, low carb chips that will knock your socks off !!!  This Hummus weighs in at 105 calories for 1/4 cup (makes about 3 1/2 cups), 1g carbs, and 5g protein !!!  A winning combination ;)

Ingredients~
16oz cooked and cooled Shelled Edamame
1/2 cup Tahini ( refer to my Homemade Tahini recipe, very very simple process)
1/2 cup Cilantro leaves
1/4 cup Lemon Juice
Sriracha to taste
1/2 teaspoon Cumin
1/2 teaspoon Lite Salt
Heaping teaspoon chopped jarred garlic
2 Tablespoons EVOO
1/2 cup water

     Puree all ingredients in Food Processor to desired consistency and Enjoy!!!  You're gunna love this !!!  I serve with carrot sticks and the Home made Tortilla Chips  ;)

  1. There are a couple of intriguing points soon enough in this article but I do not know if them all center to heart. There is certainly some validity but I am going to take hold opinion until I explore it further.
