Brussel Sprout Slaw

     I've had a few strokes of good luck lately !!!  First of all, I found a great recipe on Pinterest with Brussel Sprouts that I really wanted to try out, and Secondly, my friend Jaki gave me her old Food Processor !!! So that was the perfect combination to push me in the processing direction !!!  And thus, a slaw was born !!!

Ingredients for Dressing:
Juice of one lemon
Juice of one Orange
Finely Diced large Shallot
1/2 Cup EVOO
 Salt and Pepper to taste

     Mix the juices and shallot, and whisk in the EVOO.  Salt and Pepper to taste.  Refrigerate til ready to use.

Ingredients for Slaw:
Pound and a half ( 24 oz) Brussel Sprouts
1/2 Cup Sliced Almonds
6 slices Turkey Bacon, cooked and crumbled
1 Cup Shaved Parmesan Cheese

     Slaw Brussel Sprouts in Food Processor til chopped fine.  Add crumbled Bacon, Cheese, and Almonds~ reserving a bit of each for decorative topping.  Mix well with Salad Dressing and top with reserved Bacon, Almonds, and Cheese.  I served my slaw with Baked Salmon topped with a Balsamic Glaze and a Baked Sweet Potato. Lotsa roughage in the slaw, and I really like that !  Enjoy  ;)
