All the women in my family are great cooks !!! I'm so lucky to be surrounded by all their creativity, especially when it comes to food !!! Both my sisters are extremely talented in the kitchen, and I was fortunate enough to have my sister Gia share one of her breakfast ideas which started my wheels turning, and here's where it led !!!
Ingredients:
Pam sprayed skillet
1/2 teaspoon EVOO
chopped garlic
Small Purple Potato's Diced
Fresh Mushrooms Diced
Asparagus Spear Diced
Bell Peppers Diced
Green Onion Diced
Roma Tomato Diced
Salt and Pepper to taste
Cayenne or Tabasco is optional
Egg Whites
Light Shredded Cheddar ( optional)
In Pam sprayed skillet, heat a 1/2 teaspoon EVOO and add diced potato, mushroom, garlic, asparagus, green onion, bell pepper and cook til softened. When done cooking, push all vegetables to side of skillet and add your egg whites to cook, sprinkle entire pan with salt and pepper to taste~ as well as any Tabasco or Cayenne you desire. Top with diced Roma Tomato's and a small amount of shredded light low fat Cheddar if desired. Serve with a Mandarin Orange or Fresh Berry's on the side or a strip of Turkey Bacon. Enjoy ;)
