High Protein Asparagus Mushroom Pepper Stir Fry

     Shhhhhhh..... Can you keep a secret!?  There's no MEAT in this dinner !!!!  But, don't tell and no one will be any the wiser !!!  Have you ever checked out the meatless options in your Organic Freezer Case at the market!?  There are more and more choices for us to play with these days, and while I'm no Vegan, it certainly doesn't hurt to go meatless every once in a while !!!  This little gem is super high in protein, weighing in at 23 gms for 3 oz~ such a rich protein source and delicious to boot !!!  BOOM  Give a try and I would love to hear what you think !!!  ;)

1 Bag of Meatless Grillers ( I chose the Chicken Strips)
1 large yellow Onion
2 teaspoons chopped garlic
1 Tablespoon EVOO
Dash Cayenne
Sliced Fresh Mushrooms
Diced Fresh Asparagus
Sliced Bell Pepper in assorted colors
Light Salt to taste
Diced Green Onions for garnish if desired

    Heat EVOO is skillet and add diced onion, garlic and dash of cayenne til golden brown ( don't rush this step).  Add diced asparagus, mushrooms and cook til softened, then add the sliced peppers til crisp tender. Add light salt to taste and top with diced green onions if desired.  Enjoy  ;)
