Turkey Taco Boats


     I love trying new things out on my family ( insert sarcastic gasp here)~ Anyhoo, lets face it,  some things work and some things don't !!! This was actually warmly received and I will probably do it again !!!  After all, who doesn't want to wrap there Turkey Taco up in a Romaine lettuce leaf versus a high carb high fat fried flour taco shell, ... RIGHT!?  :0  Well, if you are health conscience, then this is a great alternative to cut the extra carbs and enjoy ALL the flavor !!!  Try it, you'll like it !!!  ;)

Ingredients:
Head of Romaine
1 pound Ground Turkey Meat ( preferably 93-99% lean)
1 Taco Seasoning Packet
1 can Black Beans
Corn ( optional)
1 Yellow Onion
1 Tablespoon EVOO
1-2 teaspoons chopped garlic
Dash of Cayenne to taste
Cheddar Cheese
Chopped Roma Tomato
Avocado Slices, or Home made Guacamole
Diced Green Onions
Salsa
Cilantro
Light Ranch Dressing
Shredded Lettuce
( If you cant handle the idea of wrapping your Turkey Taco in a Romaine Leaf, then check out Momma Lupe Low Carb Tortilla Shells, those are pretty darn good and you can fry them in a Pam coated skillet to add a little extra crisp)


     Spray skillet with Pam and add 1 Tablespoon EVOO, add chopped onion, garlic and cayenne to taste til golden brown.  Add ground Turkey and cook til all pink is gone, drain and set oil to side to throw away after cooled.  Add drained Black Beans and corn if desired, as well as Taco Seasoning packet and 3/4 cups water and simmer down 5-10 minutes.  When done cooking, tear off a Romaine leaf and fix like you would a taco, add the meat and what ever toppings you desire !!!  Serve with Guacamole and Carrots for the perfect meal !!!  Enjoy  ;)
